I picked up the processed hog 2 weeks ago and we have sampled most of the cuts. The flavor is fantastic. So much better than bland grocery store pork. It has a nice fat cap on the chops, and they are my favorite. I had them cut at 1.5” and they are perfect for stuffing or simple grilling. I had some of the add ons such as bacon and ham curing. Big fan of the end result, as neither are overpowered by the seasoning. Would not hesitate to recommend the pork. Thinking about buying a 2nd freezer for a calf.
